This wine is made from 2020 Petit Verdot. Ruby red colour, ripe aromas of blackberry and black plum combine with violet, lavender, and dried herbs together with toasty oak notes. The palate is full bodied with firm tannin and natural acidity with supporting flavours of cinnamon spices and a long finish.

Winemaking
The Petit Verdot of Mystic Winery comes from eleven small terraced plots with a total planting area of 5.73 mu. The rainfall in 2020 was significantly higher than previous years and the harvest time of Petit Verdot was delayed by ten days. To obtain optimum maturity of grapes, the winery used an automated stem remover to separate the mature berries from the stem. These berries are then gently transferred into the fermentation tank. Then cold soaked to extract colours and flavour compounds from the skins. Fermentation is controlled to provide elegant tannins and the fine body structure. MLF was completed in new French oak barrels and the wine was aged for a further eleven months before filtration and bottling.

Barbecued meat, stewed meat, smoked meat, grilled or smoked sausages, hard cheese, etc. It can also be paired with Chinese dishes such as hand grabbed lamb, a preference for abalone and chicken pot, pickled vegetables and fresh meat pancakes, and Penglai’s Eight Bowls of Chinese Toon Steamed Pork.
