Winemaking

This Rose Wine is made from Cabernet Franc and Merlot grapes, by the Saignee method. The clean juice went through separate slow and cool fermentations to preserve fruit purity. The wine was kept on Yeast lees for 8 months before being blended and balanced in preparation for bottling.
